Recipe: Barbara's Spout Soup

To make sprout soup, you will need:


300g sprouts (can use frozen)

1 x small onion, peeled and chopped

1 x small potato, peeled and diced

750g vegetable stock

1 tablespoon cream cheese or cottage cheese


Method:

Place all ingredients (except cheese) in a sucepan and boil till veg have softened.

Add cottage cheese or cream cheese.

Blend and serve - add salt and pepper to taste.

Makes 3 portions
